Get your meat face on!

Today the kids are coming for supper.  Hope the men in my life have their ‘meat face on’!  Going to do a butter rub after it reaches room temperature, then I’ll sear it in a 450 degree oven for 30 minutes then shut it all down and let it ‘roast in it’s own juices’.  OH happy days!

  1. This roast came out perfectly. I used my probe and when my temp reached 145 F in the center it was done. I did a herb butter rub, using a 1/4 cup butter, 1/4 tsp each of black pepper, dried parsley, oregano, basil, thyme, rosemary and tarragon. I rubbed it in well, seared the roast in a preheated 450 F oven, then I turned the heat down (instead of right off like I planned) to 350 for I think about 45 min. to an hour, then off. I didn’t have to really watch my time because of the probe. The trick for a good beef is to never over cook it. As long as solid meat is well seared, it is safe and is best medium rare (pink and juicy).
